AmaBlu Family
user rating
AmaBlu derives its name from Latin, meaning "I love" blue cheese. The traditional variety is cave-aged 75 days and displays a pleasant, tangy flavor. Its counterpart, AmaGorg, is a gorgonzola cave-aged 90 days to display a sweeter flavor profile. The family of cheeses is completed by St. Pete's Select, a premium blue cheese cave-aged 100 days to achieve pronounced blue-green veining and a sweet, tangy, slightly peppery taste.

The Caves of Faribault are located on a tall sandstone bluff in the small town of Faribault, Minnesota. These natural sandstone caves are ideal for affinage--the ancient art of maturing and aging cheeses. Every handmade batch of our award-winning AmaBlu line of blue cheeses is cured and aged exclusively in these sandstone caves, as are Fini Cheddar, St. Mary's Grass Fed Gouda and Jeffs' Select Gouda. Seasonal items include Verdant Grass Fed Blue and Blues & Brews Series--blue cheeses bathed in various styles of craft beer. Caves of Faribault is a subsidiary of Swiss Valley Farms.
