These little 1 oz. to 1.3 oz. fresh cheeses are most similar to a young Crottin du Chauvignol. Since we normally wrap them individually in paper and ship them when fresh, they are creamy and slightly tangy when young. At about 7 to 10 days, they begin to develop a light, white mold rind under the paper and become firmer, creamier and slightly sweet. Great as a individual cheese on a cheese plate or marinated in flavored oils and herbs. They can also be packaged in layers in a wood crate for foodservice.
