The Castillo de Canena Family Reserve Arbequina Extra Virgin Olive Oil exemplifies the team’s efforts to focus on family and community companies. Located in the Guadalquivir Valley of Andalusia in the south of Spain, Castillo de Canena produces Reserve oils by fertigating, or applying fertilizer through an irrigation system to sweeten and balance the crops, creating consistency in flavor and aroma. The olives are collected by hand at the optimal level of maturation and cold-milled in less than three hours after harvest, which guarantees freshness, healthiness and low acidity.

The Family Reserve Arbequina Extra Virgin Olive Oil has the taste and aroma of sweet almond and green apple. The oils are stored in stainless-steel tanks in an air-conditioned cellar to guarantee the “freezing” of time for the oils. Castillo de Canena bottles on its property, adding a drop of nitrogen to protect the oils from oxidation and rancidity. The result is truly superior oil.—Leska Tomash

How to Enjoy It: Use as a finishing oil, for sauces or in the classic pan tomate, in which crusty bread is rubbed with garlic and fresh tomato, sprinkled with sea salt and then drizzled with the oil.
