Colatura di Alici, anchovy sauce, adds great anchovy flavor and delicate salinity to dishes.
Gustiamo Colatura comes from the village of Cetara on the Amalfi coast. When the anchovies are caught in the summer, they are placed into wooden barrels and pressed alternating layers with handfuls of sea salt. By December, the anchovies have produced a fragrant translucent amber juice ready to be utilized in all food preparations where depth and subtle flavor is desired.
