Holy Mole Sauce (that's mo-lay)

Complex sauce made with the trinity of chiles, thickened with nuts and seeds and seasoned with old and new world spices--all with a touch of Mexican chocolate. Takes 6 to 8 hours of slow simmer as we allow the flavors to fuze into a perfect sauce. Many restaurants in Mexico are judged by the quality of their mole sauce.

Holy Mole. It's like Emmeline, remember her? She was the girl you thought no one could compare to. So complex, so sophisticated, you could spend your life never forgetting.
