While it missed its fall 2011–opening goal, in.gredients is an ambitious project worth recognition. The self-proclaimed first package-free and zero-waste grocery store in the country is set to debut “soon” in Austin, Texas. The concept has solid timing, harnessing the love of farmers-market–style, hand-picked selection; the enthusiasm for reusable containers (adding jars and bottles to the mix); and the disdain for wasteful and possibly harmful packaging (see: BPA) to create a mecca for food lovers. In.gredients will offer goods from local farms and vendors, encourage customers to bring their own bags, jars and bottles (but still offer compostable containers for the forgetful or lazy) and use pre-packaging only where necessary for food safety. Once it launches and works out the kinks, in.gredients hopes to expand, particularly into food deserts. This is food activism at its finest. —Eva Meszaros
