In Spain, they know how to treat their pigs to get what is known now as the priciest most delicious ham ever to hit the U.S. market. Just in time for summertime picnics, Jamon Iberico, or Iberian ham, can be found in limited quantities at fine restaurants and upscale delicatessens. At $100 a pound, it better be as special as it sounds. The ham comes from acorn-fed, free-roaming pigs, and the traditions surrounding how the pigs are raised and how their meat is cured go back centuries. Each pig gets one acre of land all to himself to eat acorns to his or her heart’s content. According to the farmers, it’s the nuts and idyllic lifestyle that give the ham its exquisite taste.
