The centuries-old Argudell variety of olive trees are found only in Emporda, Spain, and nowhere else in the world. Argudell olive trees are even hard to plant and grow to maturity. Only 10% of trees survive when newly planted, but with a certain fungus planted with the newly planted tree, the fungus helps increase the survival rate of the Argudell olive tree to 50%. For an olive oil to have the optimal taste, it is crucial to pick it at the right time and centrifuge it within hours of picking it. Centrifuging the olives is more sanitary than pressing olives.
