The American Collection includes a Cheddar from Pennsylvania, made by Amish and Mennonite farmers, a Gouda from Wisconsin and an outstanding, creamy blue cheese, made in Minnesota and aged in caves. “I was worried about including the Blue,” notes Kahn, “but this blue, well, blew everyone away! It converted a lot of people into blue cheese eaters.”

The Mediterranean collection has an equally fine trio that includes a Port Salut, made in France, a Tipsy Goat from Spain, which is a smooth Cabra bathed in wine, and an outstanding Italian Piave, a hard cheese similar in taste to Parmigiano-Reggiano without the crumble.
