Known as Italian bacon, pancetta (the best of the belly of the pig) is cured (not smoked) with salt, pepper and spices. A 2011 sofi™ Award Finalist for Outstanding New Product, Aux Délices des Bois Herb Pancetta begins with bellies of hand-selected pigs from family-owned farms that practice humane treatment of animals, provide a vegetarian diet and use no hormones or antibiotics. Aggressively spiced, the pancetta can be eaten as is—similar to prosciutto—or used as an ingredient for a flavorful "bacon". Try it on top of a burger or dice it up with pasta and peas.—Nicole Denis
