The signature spice blend of Palestine, za'atar is used on tomatoes, meat, fish, eggs, and labne cheese. Thyme is wild collected from the hills near Jenin, a certified organic sustainable activity. It is dried and blended with roasted sesame seeds, ground sumac and a touch of salt by women-owned cooperatives. Olive oil, za'atar and fresh-baked bread is the daily breakfast in Palestine. Canaan Fair Trade is a social entrepreneurship firm dedicated to artisan-quality products based in Jenin, Palestine. The company sources its agricultural products from a network of 49 cooperatives organized in the Palestine Fair Trade Association with membership of 1,700 farm families. Canaan products are certified Fair Trade, USDA organic and are found in specialty and organic shops throughout the U.S. and Europe. Canaan's olives and extra-virgin olive oils are highly prized for the wider impact they have on the producers' communities through Fair Trade practices. Other products include sweet and savory spreads, whole grain and hand-rolled couscous, and handmade za'atar.
