Gluten-free products have been flooding the market, to the great benefit of people with celiac disease (gluten intolerance) or wheat allergies. A gluten-free diet is the only known treatment for celiacs, and in a food climate overwhelmed with processed foods, afflicted eaters have been forced to comb nutrition labels for any off-limits ingredients (e.g., maltodextrine, dextrose).
At least 1 in 133 Americans have the genetic disorder, and the demand for variety and clearly labeled products shows; countless delicious new foods have entered the market touting their gluten-free status (check out this list of available products, from breads and crackers to entrées and condiments). The Gluten Intolerance Group launched its first annual Gluten-Free Challenge weekend in May 2010 to build awareness of celiac disease, while some parents took it upon themselves to create delicious gluten-free snacks and ingredients: Dr. Lucy developed a line of cookies for her gluten-intolerant son (see foodspring’s Q&A with Dr. Lucy); Kettle Cuisine founder Jerry Shafir began adding gluten-free goods to his line when his daughter was diagnosed with celiac disease (see Jerry Shafer’s Q&A ).
